Abstract: The global burden of metabolic diseases continues to increase.As ideal substitutes for sucrose,nonnutritive sweteners (NNS)are being used increasingly widelyinthe food industry.Thisarticlesystematicalyreviews the mechanisms underlying the metabolic efects ofboth natural and synthetic NNS from a food science perspective.It discusses theirapplication value in sugar-reduction strategiesforfoods andtheir potential risks.Byanalyzing the effects of diffrent types of sweetenerson blood glucose level regulation,their impacton gut microbiota,and theirassociation with weightcontrol,itdemonstrates thattheir "non-nutritive"characteristicdoesnotequate tometabolicinertess.The study points out that the metabolic efects ofNNS inthe humanbody exhibit significantdose dependencyand individual variability,necessitating theestablishmentofamore scientificevaluationsystemfortheirapplicationinfoods,tosupport the rational use of NNS,the optimization of product formulations,and future research.
