Abstract:Thearticleaims to address issues intraditional foodqualitytraceabilitysystems suchas lack of information transparency,data tampering,and unclear accountability,and to enhance food qualityand safety management capabilities.Based on the core features of blockchain such as decentralization,immutability,and traceability, combined with IoTsensing technologyandsmart contract mechanisms,a fullfecycle food quality traceability system is constructed; the system's performance is validatedthrough comparative experiments,using hash functions fordata encryption and a consortium blockchain consensus mechanism to ensure trusted multi-party collboration. Results showthat the constructed blockchain traceabilitysystem realizes end-to-end traceabilityoffood from planting and production,processing and packaging,storage and logistics to terminal sales.Theaveragedata on-chain latencyis less than 30O ms, traceability query response time is ⩽2 s, and data tampering resistance reaches 100% . Compared with traditional centralized traceabilitysystems,thereare significant improvements inkey indicators suchas information credibilityandaccountabilityefficiency.Thestudy indicates that blockchaintechnologycan effectivelyaddress the shortcomings of traditional food traceability systems,providing reliable technical support for food quality and safety management with broadapplication prospects.Future integration with big data,artificial intelligence,and other technologies can further improve the intelligence level of the system.
