Research on Rapid Identification and Control Technologies forMicrobial Contamination in Foods

Abstract:This paperfocuses ontherapid identificationand controlof microbialcontamination in foods.Itfirstoutlines the majorcontamination types,including pathogenicbacteria,spoilage bacteria,molds,virusesandparasites,and their transmissioncharacteristics indairy products,meat products,fruitsand vegetables.On thisbasis,itdemonstrates how real-time fluorescence quantitativePCR,LAMP isothermal amplification,immunodetectionand microfluidic biosensors shorten the overall detectioncycle in practical applications.Furthermore,it clarifies the technical mechanisms of control measuressuch as thermal processing,high hydrostatic pressure,pulsed electric fields,cold plasma treatment, preservative formulations and biological preservation,with theaim of providing a technical reference forbuildingan integratedsystemofrapid identificationandcomprehensivecontrolsuitableforfood processnganddistributionchains.
