Abstract: Grain and oil storage is a crucial link in ensuring food securityand improving grain utilization eficiency. Aflatoxin isoneof the most hazardous mycotoxins in stored grains and oils,possessing strong carcinogenic,teratogenic, and mutagenic properties,which pose aserious threat to food safetyand human health.This paper systematically summarizes the regularity of aflatoxin accumulation during grain and oil storage,including the influences of environmental factors,microbial communityinteractions,andtheintrinsiccharacteristicsof grainsandoilsonaflatoxin synthesis.It focuses onreviewing recent innovations inrapid detection technologies,covering the principles,advantages, application senarios,and limitations of immunoassays,molecular biology techniques,spectroscopic analysis,and intellignt integratedtechnologies.Teaimistoprovideatheoreticalbasisand technical reference foroptimizing grain andoil storage management,developing eficientprevention and control strategies,and enhancing fod safetyassurance capabilities.
