Abstract: Aflatoxin is a common mycotoxin in the storage and processing of cereals and oils,which has strong carcinogenicity,teratogenicityand mutagenicity,and causes serious damage tothe human liverand immune system. Therefore,itisimportanttoestablishanaccurateand eficientdetectionmethodforaflatoxin,and High-Performance Liquid Chromatography (HPLC)hasbecome the mainstream technology forthedeterminationof aflatoxin incerealsand oils due to itshighseparation eficiency,strong sensitivity,ccuratequantificationand wideappicationange.Therefore, this paper explores theapplicationof High-Performance Liquid Chromatographyin thedeterminationof aflatoxin content in cereals andoils,inorder to provide technical references forthe qualityand safety controlofcereals and oils.
