Application of Simultaneous Detection Technology for Multiple Pathogenic Bacteria in Food Safety

Abstract: In response to the threat to public health and safety posed by multiple pathogenic bacteria in food and the limitations of traditional detection methods such as long detection cyclesand low eficiency,a technical system forsimultaneous detectionof multiple pathogenic bacteria is established toimprovedetection eficiency.Theresearch subjectsareSalmonella,Staphylococcus aureus,and Listeria monocytogenes.Specific primers and probesaredesigned, andasimultaneous real-timefluorescencePCRdetectionsystemisestablishedandoptimized.Methodologicalvalidation and practical application evaluation are conducted on samples such as meat products,dairy products,and aquatic products.The detection limit of the established method reaches 102 CFU/mL,with good specificity. The detection specificity for different target bacteria is 100% . The detection time is shortened to 4~6 hours.The validation of 12O actual samples showed that the coincidence rate with the traditional culture method is 96.7% . This simultaneous detection technology can overcome the shortcomings of traditional methods such as long time consumption and low throughput. It hastheadvantagesofrapidityaccuracy,andhighthroughput,providinganefective technical means forfoodsafety supervision and emergency monitoring.
