Rapid Detection of Sudan Red I in Chili Oil Using Colloidal Gold Immunochromatatographic Assay

Abstract: The rapid detection of Sudan Red Iinchili oil is conducted using coloidal gold immunochromatography in this paper.The results showthat the detection limit of the collidal gold immunochromatographic assay (GICA) 10μg/kg with no cross-reactivitywithSudanRedII,SudanRedII,orSudanRedIV,andisconsistent withthenationalstandard method.This methodissimple tooperate,highly eficient,andstable,making itsuitable for therapid detectionof Sudan Red Iin chili oil.

苏丹红是一种亲脂性偶氮化学染色剂，主要应用于石油、蜡等增色及地板增光[1-2]，有时会被不法分子非法添加进食品中，短时间内大量摄入会导致死亡，长期食用则有致畸、致癌、致突变等风险[3-5]。（剩余5808字）
