Abstract: Time-Temperature Indicators (TTIs)are essential tools for monitoring and dynamically indicating the remaining shelf lifeof products throughout the supply chain,especiallthosethatare highlysensitive to temperature variations and dependoncold-chain transportation.This paper first systematicallyoutlines the fundamental principles and modeling approaches of TTIs.Itthen provides adetailedanalysis offour major typesof commerciallavailable TTIs: diffusion-based,polymer-based,enzymatic,and microbial indicators.The current applicationsand potential future developments of TTIs are also discussed.
