Abstract： Plantsterols have significant processing limitationsdue totheirstructural characteristics，andit is necessary to relyoncarriers to construct stablecompound powder forms to adapttothe processing conditions of nutritional fods. The selection path ofcarriers was systematicall expounded based on the molecular structure of sterols，the performance requirements of food systems for carriers，and typical carrier combination methods.Feasible suggestions are provided fromthe perspectives of stable dispersed structure，release behavior during the digestion stage，matching of process conditions，and qualitycontrol strategies，to form anoverall configuration idea ofcarriers fordiferentfood scenarios.
