Abstract: As the catering industry expands into large-scale operations and chain networks,traditional Chinese cuisine faces a growing disconnect between its experience-based culinary techniques and modern food safety standards. Thisstudy highlights the imperativeof bridging thesetwodomains,emphasizing thatsuch integration is essential for safeguarding consumer health,preserving and innovating culinary heritage,and supporting industry standardization.By exploring pathways through mechanismslike establishing coordination frameworks andoptimizing ingredient preparation processes,the research aims to guide the sector's standardized transformation,and harmonize the preservation of traditional skils with the implementationof safety protocols,ultimately driving sustainable development in Chinese cuisine.
