Abstract:Withtheincreasingdemandofonsumersfornatural,greenandhealthyfood,wildvegetables,asaatural plant resource rich in nutritional and medicinalvalue,havereceived widespread attention.Thisarticle systematically reviews the resource characteristics,nutritional value,medicinal valueand current processing status of wild vegetables. It focuses on discussing the research progress of deep processing technologies such as quick freezing, green protection, blanching, vacuum low-temperature frying and ready-to-eat product development. Taking the wild vegetable factory of CompanyAasan empirical case,it proposes the technical pathand futuredirection for thedevelopmentof the wild vegetable industry.
