Research on the Application of Food Detection Technologies in Food Safety Regulation

Abstract:To address issues in food safety regulation such as lowdetection efficiencystrong interference from complex matrices,anddifficultiesinidentifying novelcontaminants,thisstudy investigates theapplicationofcutingedge detection technologies including electrochemicalbiosensors, CRISPR-Casl2a,and dep learning,combined with multi-omics fusion innovations (metabolomics,proteomics,lipidomics,and genomics).Itvalidates key application scenarios,namelycold chain foods andonlinecateringsafety.Theresultsdemonstratesignificant improvements in detection sensitivity and speed, with the detection limit for pesticide residues reduced to 0.1ppt ,microbial detection limit in cold chain food reaching 10CFU/mL ,and the accuracy of substance identification in online catering improved to 98.7% .This research provides technical support for food safety regulation.
