Research on the Application of Food Detection Technologies in Food Safety Regulation

Abstract：To address issues in food safety regulation such as lowdetection efficiencystrong interference from complex matrices，anddifficultiesinidentifying novelcontaminants，thisstudy investigates theapplicationofcutingedge detection technologies including electrochemicalbiosensors， CRISPR-Casl2a，and dep learning，combined with multi-omics fusion innovations （metabolomics，proteomics，lipidomics，and genomics）.Itvalidates key application scenarios，namelycold chain foods andonlinecateringsafety.Theresultsdemonstratesignificant improvements in detection sensitivity and speed， with the detection limit for pesticide residues reduced to 0.1ppt ，microbial detection limit in cold chain food reaching 10CFU/mL ，and the accuracy of substance identification in online catering improved to 98.7% .This research provides technical support for food safety regulation.
