Abstract: Ananalysis methodfor assssing the compositionand massfraction ofsterols was developed,and natural oils andfats were differentiatedbyusingchemometric techniques. Unsaponifiable fractions were extractedfrom the oilsand fats,and sterol fractions were separated by liquid chromatography.These fractions were subsequently derivatized to facilitate the determinationofsterolcompositionand mass fraction bygaschromatography.The sterolcompositionand massfraction in 27 batches of9 diferent natural oils and fats were analyzed employing principal component analysis (PCA)and cluster heat map analysis.The results showed that the method had high specificity fordetermining sterol composition and mass fraction in oils andfats, withrelative standard deviations (RSD)forrepeatabilityand intermediate precision being less than 5% .The test solution remained stable for up to 36h ,and minor variations in chromatographic conditions had minimal impact onthedeterminations,enhancing the method's robustnes.The integrationof these two chemometric methods enabled visual analysis ofoil types,effectively identifying and distinguishing various natural oils and fats.
