Antioxidant Activity of Tuna Peptide and Its Application in Facial Mask Design

Abstract：The antioxidant activityof tuna peptides wasanalyzed，and an efficient anti-aging gel facial mask based on tuna peptides wasdeveloped.Experimental results demonstrated thattuna peptides had significant in vitroantioxidant activity，particularlyexceling in hydroxyl radical scavenging.Using fuzzy mathematicsand response surface optimization， the ratios of key facial mask ingredients PVA-217，Aristoflex AVC，and tuna peptides were optimized. Their optimal mass fraction was determined as follows 5.80% 0 1.20% and 1.60% ，respectively. Under this formulation， the facial mask achieved excellent sensory scores， a total antioxidant capacity of 4.34U⋅mg（prot）-1 ，and demonstrated good stability， moisturizing properties， and skin permeability.
