Food Safety Risk Assessment and Prevention and Control Measures in the Process of Baijiu Filling Production

Abstract: Aiming at the food safety risks in the process of Baijiu filling production,this paper constructs a matrix assessment model basedon the probabilityof risk ocurrenceand the severity ofconsequences,defines the risk levels of different risk events,and proposes comprehensive prevention and control measures covering personnel,equipment, materials,standards,emergency systems,and accountability,with theaim to provide scientific basis for enterprises to achieve risk quantitative management and precise control.
