Research Progress on Detection Methods ofVitamin D Compounds in Food Matrices

Abstract: Vitamin Dand its analogs,as fat-soluble vitamins,playa critical role inthebiological functions of humans andanimals.Studies have confirmed that their deficiency is closely associated with the development of skeletal and extra-skeletal diseases (such as cardiovascular diseasesand immune dysregulation).Vitamin D is primarilyderived from the biotransformationof7-dehydrocholesterol in theskinunderUV-Bradiation,anddietaryintake (including natural foods and nutritional supplements)isalso crucialfor regulating its levelsinthebody.Therefore,establishing eliable analyticalmethods todetectthecontentof vitaminDanditsanalogs infoodsandsupplements isofsignificantimportance for preventing deficiencyand related diseases.This article reviews the research progressin the detection methods of vitaminDanditsmetabolites infood matrices,withafocus onchromatographic techniques combinedwithtraditionaland novel sample pretreatment methods.Theapplicability,sensitivity,imitsofdetection,andoperationalsimplicityof se methods are analyzed to provide reference for related research.
