Research on Influencing Factors and Optimization Strategies for Determination of Synthetic Colorants in Pastries by High-Performance Liquid Chromatography

Abstract: Synthetic colorants are widely used in pastry production, and their excessive application poses a significant threat to food safety,making it essential to establishaccurateand reliable detection methods.Highperformance liquid chromatography (HPLC) is employedas thecore analytical approach to systematically investigate the effcts of sample pretreatment methods,chromatographic condition selection,matrix complexityanddetection wavelength setings on detection outcomes, with corresponding optimization strategies proposed for each identified influencing factor. Given the complex nature ofthe pastry matrix,particular attention is paid to the critical steps affecting method accuracy and reproducibility. The results demonstrate thatthe optimized pretreatment procedure and chromatographic parameter configuration effectively eliminate matrix interference,and the introductionof a programmed wavelength-switching detection mode further improve the signal response sensitivity of each component, significantly enhancing the sensitivity and accuracy of the method.The optimized HPLC method exhibits good linearity and satisfactory recovery rates,providing reliable technical support for routine monitoring of synthetic colorants in pastries and food safety supervision.
