Abstract:The“Xibei Prepared Dishes”incident haslargely destroyed the traditional quality signals that consumers rely on for decision-making,shaken thetrust foundation of transactions in the catering market, and may becomea typical case triggering the“Lemon Market”effect in the catering industry.Ultimately,it will severely impactthevitalityofcatering consumptionand theefficiencyof thecatering market,underminingor reducing the overall social welfare level.The key to avoiding the“Lemon Market”effect in the ca tering industrylies inbreakingthe informationasymmetryin the use of prepared dishesand ensuning consumers'right to know and righttochoose.Tothisend,onthebasisofiformulating theregulationson the“four categories and three colors”classification labeling for the use of prepared dishes,itis necessary toestablishand graduallyimprovetheinformationdisclosure mechanismfortheuseof prepared dishesincateringservices inaccordancewiththeframework of“dishlabeling-informationdisclosure-supervisionand inspection".
