Alkali-assisted extraction and processoptimization of insoluble dietary fiber from kiwifruit pomace

AbstractToachieve the highvalue utilizationof kiwifruit pomaceafter juicing,this study took kiwifruit pomace as therawmaterial and adopted the alkali method to extract its insoluble dietary fiber (IDF).Single-factor experiments were conductedtoinvestigate theefectsof NaOHconcentration,solid-liquidratio,alkaline hydrolysis temperatureand alkaline hydrolysis timeonthe IDF extraction rate,and thenthe response surface methodology was applied to optimize theextraction process.Theresults showed that each singlefactor exerted atrend offirst increasing and then decreasing the IDF extraction rate;theorder of the influence degree of each factor on the IDF extraction rate was NaOH concentration > alkaline hydrolysis temperature > solid-liquid ratio > alkaline hydrolysis time;except for the weak interaction between NaOHconcentrationand alkaline hydrolysis temperature,the interactions among the other factors were strong,among which the interaction between alkaline hydrolysis temperature and alkaline hydrolysis time was the strongest.Theoptimal extraction process conditions werefinallydeterminedas folows:NaOH concentrationof1.8g/L, solid-liquid ratio of 1:19 0 g/mL ),alkaline hydrolysis temperature of 50∘C ,and alkaline hydrolysis time of 145 min. This study provided a reference for the resource utilization of kiwifruit pomace.
