Hazards and common detection methods of veterinary drug residues in animal derived food

Abstract Illegal use of veterinary drugs during animal breeding easily leads to drug residues in animal products, which in turn triggers food safety risks, endangers public health, and disrupts ecological balance. This paper systematically reviewed the categories and hazards of common drug residues in food safety risk monitoring of animal derived foods, and introduced commonly used detection technologies. This paper lists the main residual veterinary drugs detected in breeding and production, including prohibited drugs such as β -agonists, chloramphenicol, amantadine, nitrofuran derivatives, malachite green, as well as restricted or suspended-use drugs including sulfonamides, quinolones, amphenicols and their metabolites, tetracyclines, diazepam and dexamethasone. Consumption of animal derived foods containing residues of the above-mentioned drugs may cause digestive discomfort (nausea, loss of appetite), as well as damage to the liver, kidneys and other organs, posing a threat to public health. In production, enzyme-linked immunosorbent assay (ELISA) and colloidal gold assay are often used for preliminary screening, supplemented by high-performance liquid chromatography (HPLC) and high-performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS) for result verification. The synergistic application of multiple methods can improve the accuracy of detection. This paper provides a reference for food safety supervision of animal-derived foods.
