Effects of fermentation with Cordyceps spp.strains 51 and 55 on the metabolites of fennel

Abstract:Metabolomicswasusedtoanalyzethechangesinmetabolites(X51,X55)andkeymetabolicpathwaysinfennelbeforeand afterfermentationwithCordyepsspp.strains51and55.Theresultsshowedthatfermentationalteredthemetabolicprofileoffennel comparedtothecontrol group(XK).ThepaersofdiffrentialmetabolitechangesweresimilarbetweenXKvsX51andXKvsX55 comparisons,with310and297upregulatedmetabolites,respectively,primarilyaminoacidsandtheirderivatives,and423and400 downregulated metabolites,respectively,primarilyphenolicacids.InboththeXKvsX51andXKvsX55comparisons,themainupregulatedmetabolitesincludedL-ornithineandcyclo(L-leucine-trans-4-hydroxy-L-proline),amongothers.Theupregulationof thesemetabolitesmightbecloselyelatedtothepharmacologicallyactivecomponentsoffenel.ThediferentialmetabolitesfromXK vsX51andXKsX55omparisoswereanlyeichdinosyesisofscondarymetablitesiosythesisofcofactosd synthesis of aminoacids.Theannotation proportionof the biosynthesis of secondary metabolites pathways allexceeded 39% ,indicating that this pathway might play a core regulatory role during the fermentation process.
