Abstract:Environmental pressuresandthedemandfordietarydiversificationare driving humanity continuously explore new foodresources.Edible insects have long been a partof the human diet.In recent years,the consumption ofedibleinsects hasshiftedfromtraditionalpractices towardindustrialapplications,experiencing significantgrowth. The concept of edible insects was outlined,reviewing their potential as a sustainable food resource from 3aspects: edible species,nutritional and health benefits,and environmental sustainability(including environmentalresource consumptions,greenhouse gas emissions,feed conversion rates,waste conversion and circular economy and environmental safety).Theaimwas to provide background informationontheriseof this new foodresourcethat was being rediscoveredaftertraditionaluse.It alsoexamined thecurrent stateof development and 2 majorbariers in its development:consumer acceptance and regulatory frameworks.Edible insects represented an excellent new food resource for sustainabledevelopment.Theutilization of edible insects could enrich people’s diets,meet nutritional needs,alleviate environmental and resource pressures,and hold promising prospects.
