Abstract:Extraction,as thecore processhapingthe flavorandqualityof teabeverages,directlydetermines hefinal value ofthe products.To date,hot water extractionremains thedominant technique in large-scale production.With the increasig market demand for higher-quality teabeverages,aseries ofemerging extraction technologies are demonstrating broad application prospects.This article systematically reviewed the research progress of emerging extraction technologies,inludingoldewing,ulrasoudssted,icrowaveasisted,ighrostaticpressure,uiial CO2 (204号 fluid extraction,enzyme-assisted extraction,and multi-technologysynergisticapproaches.It focusedonananalysisof how the aforementioned technologies employ distinct pathways—such aslow-temperature inhibition,physical cell disruption,medium selection,and biocatalysis—todevelopunique advantages inaromaretention,taste harmonization, colorstability,andprecipitationcontrolinteabeverages.Through systematicliteraturereviewandcomparativeanalysis, this study aimed to elucidate the development potential and applicable scenarios of various extraction technologies, striving to clarifythe pathway for their precise appication in high-quality tea beverage development, hereby providing both forward-looking and practical theoretical support and methodologies for industrial advancement.
