滇红工夫茶加工技术的发展及关键工艺技术

摘要 滇红工夫茶选用芽叶肥壮的云南大叶种茶树鲜叶作为原料,制出的红茶金毫特显,香高味浓,汤色红艳明亮,茶多酚、咖啡碱、水浸出物等含量高。总结了滇红工夫茶加工技术的发展及关键技术,旨在为生产者在技术继承、产品质量提升和加工技术创新方面提供借鉴。

Development and Key Processing Technologies of Yunnan Gongfu Black Tea

Abstract Yunnan Gongfu Black Tea is made of the fat buds and bold with leaves of Yunnan large leaf tea tree. The produced black tea has a special golden millimeter, high fragrance and strong flavor,red and bright soup color, and high content of tea polyphenols, caffeine, and water extracts.This paper summarized the development and key processing technologies of Yunnan Gongfu Black Tea, so as to provide references for manufacturers in the technology inheritance, product quality’s improvement and the innovation of processing technology.

云南茶區1938年前只生产青毛茶,属绿茶类,鲜叶摊放后高温杀青,手工揉制为散茶,茶商到产区设点收购,驮运到茶叶集散市场,设厂压制成各种“紧形茶”以便运销,年产量400余t。(剩余13302字)
