Study on Glycemic Index of Brown Sugar and Its Analysis as Potential Glycemia-Regulating Food

Abstract： This study aims to systematically analyze the nutrient composition of brown sugar，determine its glycemic index（GI） through human trial，，and explore the asociation between nutrient characteristics and GI value. The results show that brown sugar retains abundant minerals （such as phosphorus， potassium， calcium，iron，magnesium，selenium）and vitamins （ VB5 ， VB6 ， VB9 ， VE ），with its total polyphenol content （ （4.13±0.12）g/kg） significantly higher than that of red granulated sugar and white granulated sugar. GI value determination results show that the GI value of brown sugar is 53 （ ⩽55 ），belonging to the category of low-GI foods.In this study，it is confirmed that due to its specific non-centrifugal process，brown sugar retains various bioactive substances （especially sugarcane polyphenols） and minerals derived from sugarcane， providing sweetness while having a lower postprandial blood glucose response，which has provided a scientific basis for the development of blood glucose management strategies based on traditional sugar.
